I made a chicken pasta salad yesterday, once I got back from the hospital...I also made pea and mint soup.
Chicken Pasta salad...ingredients, I roasted a chicken ,then once cooked I removed all of the skin , then cut it up into small pieces, cooked some fresh pasta, made a really nice dressing to toss the chicken and pasta, sauce= olive oil, honey, natural yogurt, zest of a lemon, orange, juice from lemon and orange, Dijon mustard, it was really nice light and tangy.
I then added toasted almonds, cranberries, mandarin segments ,plus a lot of raw spinach, I gave it a good wash...it tasted so fresh ,light and delicious.
Pea soup, I added, onion,celery, potato, peas, mint leaves, stock cubes( chicken) then water....
