We fulfill the dietary requirement on behalf of those whose consciences would be affected if we were to indulge in the breaking of the food laws.

You can't literally uphold a law that governs something you literally do not possess. An example that makes this clear is men have no obligation to literally uphold a law of Moses that governs the monthly period of a woman. But like I said before, even though a law doesn't apply to us specifically, we may still glean a spiritual application out of it. An application that gets upheld again by faith in Christ.But they are part of the Mosaic Law and you say we should uphold it!
Those laws find their fulfillment in regard to the spiritual principle they point to. This is how you uphold it.....So how do you obey the dietary laws of the Mosaic Law by walking by the Spirit?

But you short change what God is capable of. Have you considered that the reason why God gave Israel dietary laws was because He wanted them healthy and not getting sick as they were eating the food of Egypt? Those laws weren't arbitrary to satisfy God's ego or sense of power. He wants us to be healthy. To be at the peak of our capabilities in order to glorify Him in our lives. Eating bacon (which even scientists declare isn't food) and other meat products that God says are unclean is nothing but a long way to death. Unclean is a synonym for unhealthy. If you can't make the correlation between unclean foods and unclean people, read Acts 11:5-12. Unclean foods represent unclean influences, particularly people. When we make conscious decisions to keep unclean influences, particularly people, out of our lives we are upholding various dietary laws in the law of Moses. Using Acts 11:5-12 to discern this is a good example of how we discern from the Bible itself how our faith upholds the various laws of Moses, not breaks them. It's not a guessing game. It's a matter of educated discernment. The Bible itself gives us the discernment into what laws are still to be literally kept (in some form or another), and which ones have found their complete and total fulfillment through the work of Christ on our behalf such that no further action regarding those is required from us.
