So when when I use the term vegetable I am using it as a cooking term. As far as botany goes there are no such things as vegetables. Vegetables is a cooking term and not a scientific one. People often say “ did you know tomatoes are fruits “ and that is true. The tomatoes we eat are the fruits of the tomato plant. But squash, jalapeños and eggplants are also all fruits of plants as well. The onion is typically the bulb of the onion plant and potatoes are usually the bulb as well. Lettuce is the foliage of a plant.
So one of my favorite vegetables are beets. I like making them into burgers and mixing them into tacos. Here are the beet burgers.
I peel them. I then dice them a bit and place them into a blender or processor. I then add liquid smoke, liquid aminos and some kind of thickener like arrowroot, oat flour or whatever. Then dice up things like onions, jalapeños or mushrooms and blend it all together by hand. Then make patties and cook them like burger. I like using pretzel buns and slicing up sweet potostoes for fries seasoned with nutritional yeast.
Beets pack a lot of healthy nutrition. They are naturally sweet so adding more savory spices really helps pull the flavor in like good bbq. You can use BBQ and make sloppy joes instead as well.
