So when when I use the term vegetable I am using it as a cooking term. As far as botany goes there are no such things as vegetables. Vegetables is a cooking term and not a scientific one. People often say “ did you know tomatoes are fruits “ and that is true. The tomatoes we eat are the fruits of the tomato plant. But squash, jalapeños and eggplants are also all fruits of plants as well. The onion is typically the bulb of the onion plant and potatoes are usually the bulb as well. Lettuce is the foliage of a plant.

So one of my favorite vegetables are beets. I like making them into burgers and mixing them into tacos. Here are the beet burgers.

I peel them. I then dice them a bit and place them into a blender or processor. I then add liquid smoke, liquid aminos and some kind of thickener like arrowroot, oat flour or whatever. Then dice up things like onions, jalapeños or mushrooms and blend it all together by hand. Then make patties and cook them like burger. I like using pretzel buns and slicing up sweet potostoes for fries seasoned with nutritional yeast.

Beets pack a lot of healthy nutrition. They are naturally sweet so adding more savory spices really helps pull the flavor in like good bbq. You can use BBQ and make sloppy joes instead as well.

Here is a cool way to cook carrots if you like hotdogs. The carrot dog is sweet but like beets can be cooked to drvelop a savory taste.
I peel them and boil them until semi soft in a combination of water, liquid aminos and liquid smoke. Then fry them seasoned with smoked chipotle, sage and pepper.

While back some friends came over to watch horror films and some of them eat meat so we got food from five guys which included many of us just eating the fries at the house.

I like roasted vegetables.
Dear sister do you like the idea of a fourteen year old girl having a double mastectomy
because she beleives she is a boy . THERE IS A HUGE reason i ask this sister .
the fellow you talking too cheered it on at another thread .
OH i know you didnt know that . But i watch people sister . i like roasted vegetables too
but i dont like doctrine and ideals that roast folks alive in a lie .

When my hyperlexia kid wouldn't eat vegetables, she was obsessed with bacon. So we made her carrot bacon and she loved it. Now she loves carrots.

Mr. Duck loves it when I make chicken teriyaki with steamed carrots and cabbage.

We also love yachaejeon (Korean vegetable pancakes) on occasion. They're kind of difficult for me to make. I mess them up a lot. We love tempura, especially asparagus.

I like tempura also. I’ve never made it myself. But this Japanese sushi restaurant I go to has really good veggie sushi and also makes really good mushroom and asparagus tempura and it’s so good. I don’t know how they do the mushrooms to make them so fantastic.

I like tempura also. I’ve never made it myself. But this Japanese sushi restaurant I go to has really good veggie sushi and also makes really good mushroom and asparagus tempura and it’s so good. I don’t know how they do the mushrooms to make them so fantastic.
It's really easy to make tempura from home. We just mix flour, a little cornstarch, salt and club soda to make a batter and fry them in canola oil. (Because I'm allergic to the soybean oil in vegetable oil.)

One of the easiest things you can make! No harder than French toast.

I also am a big fan of oatmeal. This is extra thick oats cooked in water but then added almond milk to it. Makes it a bit creamier. Then after cooking as it was cooking down I added cacao powder which is rich in antioxidants, pumpkin pie spices, chopped dates and some walnuts.

I like my carrots completely burn't. Yummy! They taste delicious burn't :stageright:

Blanched, sautéed and then with butter wash

Green beans, of course, get pork grease.

Cabbage? Steamed and buttered, coleslaw, egg rolls and in all sorts of Asian dishes from Mu Shu to various other dishes.

Only I cannot stand bananas or turnip/parsnip/rutabaga type vegetables. All others? I'll eat. Broccoli Rabe isn't my favorite....not a big fan of bitter. But it's not a deal killer.

I was not a fan of Brussel sprouts but I found out if they are roasted they are pretty good . Okra is very good grilled or roasted it is sweeter this way to me .

Anyone ate fried yucca root ? Good stuff ! Ate some at a local Columbian restaurant . Should try some of my own , I have plenty of yucca plants in my yard .

@Skovand do you have an instant pot or pressure king pro?
Just saw this. I don’t have those. Not even really sure what they are. I’ll google it though. I mostly just use air fry cookers and stove tops with pans and pots to cook in. I only used the air fryer for the first time this year. My dad bought me and air fryer for Christmas last year and gave it to me like a week before Xmas. Then few days later he passed away in an accident and so I never used it for months. Finally used it to cook them pumpkin spice biscuits that was frozen that he got me around October that year.

Though this is not really cooking it’s a great way to use bananas before they go bad. You can just peel them and break them up and freeze them. Then place them after they are frozen into a blender with just a little soy milk and add cacao and vanilla extract to it. Makes a nice chocolate ice cream that’s healthy.
