Cooking lately….SCANT this time of year… Quick to prepare, slow crock cooking, one pot meals primarily…soups, stews ….not much baking or sweets…

Most of day is spent outside…preparing buildings, woods, fields, animals, soils, plants, firewood, fuels, machinery for winter….cold, rains, snow, winds…whatever and having meal ready at end of day without a big to do, or clean up.

THEN….the fattening up with the holidays…meals and family and mmm, mmm, mmm sweets!!

Tonight, I'm making chili for the first time this season. For years I did this on Halloween. My community celebrates Halloween the weekend before the actual day to minimize tragic accidents from people coming home from work in the dark. This year was the first year they celebrated on Saturday rather than Sunday. It was WAY too busy Saturday for me to make the chili then.

I put a package of sausage and 3 types of beans along with bell peppers, onion, garlic and a host of delicious seasonings.

All sounds good, smells good….but chili…and beans (other than green beans)…. Just can’t stomach…or get past the gag reflex….

I'm making porcupines.

Lol. That's the country name for them, I guess, but that's what I grew up with them being called.

They're bell peppers stuffed with ground beef, brown rice, onion, and diced tomatoes baked in tomato soup with cheese on the top. If my Dutch oven will let me take a to picture, I'll try to post one.

My first and likely only meal of the day ...a protein bowl ...7 slices of bacon, 6 scrambled eggs, and about 10ozs of chuck roast.
It will probably be 2 meals. lol

Well ...that was short-lived.

I ate about 3 ozs of roast, 7 slices of bacon, and 2 or 3 eggs.

Still, not bad!

They're bell peppers

I like bell peppers. I remember when I was a kid and we would order pizza they would call them, mangos. Even the pizza shop knew to put green peppers on it if you said mangos. So I grew up thinking that green peppers were mangos. Weird. Once I grew up and got to eat a real mango and learn what it is, calling green bell peppers mangos went away.

So I grew up thinking that green peppers were mangos. Weird. Once I grew up and got to eat a real mango and learn what it is, calling green bell peppers mangos went away.

I laughed out loud at that. But why did the pizza store call them mangos?

I didn't realize it but it was the last time I make porcupines.

Mr. Duck loves when I make anything Chinese or Greek, or anything put on bread, but when I make southern or country food... Not into it. Especially if there's gravy.

I'm sticking to shawarma and stir fries.

Mr. Duck loves when I make anything Chinese or Greek, or anything put on bread, but when I make southern or country food... Not into it. Especially if there's gravy.

Me too! Lol. Shawarma is like a pita wrapped with bitter herbs (cilantro, parsley), and we use olives, bell peppers, tomatoes, red onion and lots of beef cooked in more bitter herbs and I usually make a Greek yogurt dressing.

It's one of my favorite dinners next to tres amigos, which is just chicken, steak, and shrimp with sides of steamed tortillas, refried beans, and rice. I usually only make that one for dinner with my family on hot summer nights with virgin pina coladas. (Because I am NOT getting sick in the morning. That is not fun to me.)

Everybody seemed to call them mangos. Mom would say, order a pepperoni pizza and get mangos and onions on it. It always showed up with green peppers & onions. Never a real mango, that sounds like it might be good though!

We were a big family and ordered pizza a lot! So I heard them talking to the pizza guys, mangos & onions too!

Vegetable Lasagna.
Another favorite.

I cannot wait until my basil is ready for harvest for lasagna and spaghetti.

I learned the phrase years ago "a poor man with many spices always has a feast." It's true.

If you can make dough, homemade mozzarella with fresh basil and fresh tomatoes and make a margherita pizza, or even caprese, that's just awesome.

You guys might like this book. I have to wait three hours before I can finish the top coat for my bathroom floor, so I'm going through it today.
