I've been meaning to post on anointing, but (as you mentioned) the thread has been hijacked and gotten sidetracked a bit.

In addition to what @Behold posted, there is this...

James 5:14-16 (KJV) ¯¯¯¯¯¯¯¯¯¯ ¹⁴ Is any sick among you? let him call for the elders of the church; and let them pray over him, anointing him with oil in the name of the Lord: ¹⁵ And the prayer of faith shall save the sick, and the Lord shall raise him up; and if he have committed sins, they shall be forgiven him.

Mark 6:12-13 (KJV) ¯¯¯¯¯¯¯¯¯¯ ¹² And they went out, and preached that men should repent. ¹³ And they cast out many devils, and anointed with oil many that were sick, and healed them.

I saw someone be anointed before. This person was at peace and was supported and blessed in some ways but not all. I guess it's kind of like baptism that it is like a symbol of faith or trust?

It is a symbol but one that God honors. Now that doesn't mean that every person who practices anointing with oil and praying, is sincere.
