Cheese has it's own language... of which I do not understand... and I suspect that I would not LIKE much of what is actually out there...
My cheese experience is very minimal... cheddar... mozzarella and swiss... I love all three.... Parmesan is not a cheese that can be used a lot of... I do like it on my pasta... and in Caesar salad.
If I see mold ( like some cheeses highlight).... I'm OUT... Good night Irene!!!

As for your comment about parmesan.... I absolutely LOVED it... I think it's AWARD worthy.... LOL
