My guess is that the animals had already started dying--possibly even massive die-offs. God could simply have taken the skins of already dead animals to clothe Adam and Eve.

No... I don't disagree. In fact it is exactly what I believe. I am just sticking to the point (for now) the the coats of skin were MADE by God. He didn't take them from an animal.m sure you will disagree, it is a too far reach for most people who were traditionally told they were animal skins, even though it does not say that, as you pointed out. :)

Literal death did not start in Eden...but spiritual death did.

I am aware of that... But you are making up things as you go. It doesn't say any of that.When you skin and animal you have to cure the hide and then you make coats, etc.

That's not what the Hebrew says--it says, "Dying, you will die..." The process of death started from the moment of that decree. Interestingly, Isaiah insists that in the Millennial Kingdom, long life will return and the "lion will lie down with the lamb" and neither will there be any killing at all.
