Jesus is not a "day" nor is He ever symbolically/metaphorically linked to being a "day" in the Bible
Jesus is the true Sabbath and we find our rest in him, not by keeping one day out of seven. Maybe you are unfamiliar with the following verses as they may be suppressed in SDA circles:

Matthew 11:25–30 (KJV): 25 At that time Jesus answered and said, I thank thee, O Father, Lord of heaven and earth, because thou hast hid these things from the wise and prudent, and hast revealed them unto babes. 26 Even so, Father: for so it seemed good in thy sight. 27 All things are delivered unto me of my Father: and no man knoweth the Son, but the Father; neither knoweth any man the Father, save the Son, and he to whomsoever the Son will reveal him. 28 Come unto me, all ye that labour and are heavy laden, and I will give you rest. 29 Take my yoke upon you, and learn of me; for I am meek and lowly in heart: and ye shall find rest unto your souls. 30 For my yoke is easy, and my burden is light.

Also do the SDAs fulfill the other half of the Sabbath Commandment? It says that those under this Law had to work six days in the week. My last 20 years I worked a 9 day fortnight, equivalent to a 4 and 1/2 day week.

Yes as we see He gives us rest from what weakens us, but it doesnt change the Sabbath one iota, the Sabbath was made for man and instituted in the weekly cycle by the Creator, and we see its purpose throughout Gods Word.

Matthew 5:18
For verily I say unto you, Till heaven and earth pass, one jot or one tittle shall in no wise pass from the law, till all be fulfilled.

Hebrews 4:1-11 (KJV): 1Let us therefore fear, lest, a promise being left us of entering into his rest, any of you should seem to come short of it. 2For unto us was the gospel preached, as well as unto them: but the word preached did not profit them, not being mixed with faith in them that heard it. 3For we which have believed do enter into rest, as he said, As I have sworn in my wrath, if they shall enter into my rest: although the works were finished from the foundation of the world. 4For he spake in a certain place of the seventh day on this wise, And God did rest the seventh day from all his works. 5And in this place again, If they shall enter into my rest. 6Seeing therefore it remaineth that some must enter therein, and they to whom it was first preached entered not in because of unbelief: 7Again, he limiteth a certain day, saying in David, To day, after so long a time; as it is said, To day if ye will hear his voice, harden not your hearts. 8For if Jesus (Joshua) had given them rest, then would he not afterward have spoken of another day. 9There remaineth therefore a rest to the people of God. 10For he that is entered into his rest, he also hath ceased from his own works, as God did from his. 11Let us labour therefore to enter into that rest, lest any man fall after the same example of unbelief.

The writer to the Hebrews attempts to convince the Jewish Christians to loosen their position of holding onto the Law of Moses and its Temple rituals before the Romans destroyed the Temple in AD 70. The above is his exposition of the subject of the True Rest (Sabbath) that we participate in. This is not speaking about our need to maintain one day in seven.

And what day is it talking about, notice it clearly refers to the rest on the seventh day by the Creator, it is the Sabbath in the weekly cycle by the one who made it. Now the writer does go further, he is bringing together a deeper rest experience, to which God calls His people, with the symbol of faith that God Himself instituted, the Sabbath. We dont quite understand the fullness of the Sabbath and the rest which God gave as an example, we will ask the Creator when we get to heaven.

And what day is it talking about
He raised the occasion when Joshua brought the children of Israel into the land but failed to give them true rest, but nevertheless he cites this as a pattern of the future rest (Sabbath) when Jesus establishes the Kingdom of God upon the earth in fulfilment of the promises to Abraham. Let us labour to enter into that rest.
