Was Adam & Eve's disobedience simply to believe that eating from the tree of knowledge of good or evil would make them wise like the Lord God?
Is it possible to function morally outside the human concepts of good and evil?

Good and evil are NOT human concepts. They are divine concepts. And all human beings are expected to discern between good and evil through their conscience. God implants the conscience in every person. Those who choose evil over good sear their conscience so that it no longer tells them to do right.Is it possible to function morally outside the human concepts of good and evil?

I feel for the animals of this world, they are the real victim's.Is it even possible to operate outside of the influence of good and evil? We are slaves to one spirit or another.
But here is your example, someone who operates completely randomly when given a choice, The judge that flips a coin. That might pass for a kind of subjective morality in today's world..? But we know such a system would be entirely unjust and evil.
In the mind of God. God knows the end from the beginning, and He already knew BEFORE He created Adam that sin and evil would enter into this world. He also planned a remedy through Christ, who would not only be the Last (or Second) Adam, but who would also establish the righteous Kingdom of God on earth as King of kings and Lord of lords.in the minds of divine being's?
What are you , or what have you been, entangled with , that leads you to "feel" pity for the animals of this world,I feel for the animals of this world, they are the real victim's.

If I was God and knew beginning to end, I wouldn't have made creation in the first place. (Because I'd know it would fail)In the mind of God. It's all meaninglessness! Arrrrrh!Mankind was never higher than animal. That's why they're slave to the beast (Cherubim). Since the dawn of Adam & Eve there is no righteousness in the world of mankind, they're always rejects God until today even Jesus himself crucified by them (Ecclesiastes 3).
Ecclesiastes 3:18-19
18. I said in my heart, It is because of the sons of men, so that God may put them to the test and that they may see themselves as beasts.
19. Because the fate of the sons of men and the fate of the beasts is the same. As is the death of one so is the death of the other, and all have one spirit. Man is not higher than the beasts; because all is to no purpose.
The Creator did know it would fail, that’s why He took on human flesh...to atone for it...That was His plan, right from the start. He is the beginning and the end (rev. 22:13) ie.
