A friend brought around some field mushrooms and avocados from her parents farm. Since I was going to do a load of meals for the freezer for the week which I take out for work or when I don't feel like cooking, I decide to get myself motivated... I precooked then fried some sausages with red onions in mushroom sauce. I also made some beef stew with veges, mushrooms, paprika, chives and chilli and made some chicken stir-fry with mushrooms, shredded, red and white cabbage, julienne carrots and stuffed chicken breasts filled with mozzarella cheese and apricots. All of these meats were on special at our local supermarket. I don't buy expensive meat or meat that's not on special...
This morning I decided to make a pizza base recipe I found on our NZ supermarket website. Very simple to make. 1 cup of plain yoghurt and 2 1/4 cups of plain flour ~ kneed and add chives, rock salt or whatever you want. I threw mine into the freezer ready for another time I might need a quick meal. I'm eating the avocados on toast this morning for breakfast, with pepper and some coarsely ground rock salt. I like cooking but I enjoy trying to save money, conserving power and finding ways of becoming a bit more frugal. If I had the chance, I would buy a lifestyle block and go off the grid ;)
