My mom used to cook everything from scratch, here is a simple one that is easy and excllent;


Chicken stew;

I large onion, chopped
1 large carrot cut in 1/2 inch chunks
2 celery stalk cut 1/2 inch slices
1 medium chicken fresh

spices you can use thym, 1 laurel leave, or rosemary, salt and pepper to taste

cook the onions medium heat until transparent, add whole chicken, cover with water, plus 2 inches extra
ass veggies and spices to taste.

cook medium low heat, for 1 hour 30 minutes
remove chicken and separate meat, keep aside,

pass the broth in a colander,

in the Broth add some but not all the meat, rectify seasoning, you can reuse a few of the celeri and carrots id they are not too squished, you can add if you like 1/4 cup rice of pasta just cook until all is done.

fast to do and as an extra you have plenty of chicken left over for another meal..

Can anyone recommend some lovely soups or even home meals to make.

It must all be made from scratch please..
Mr. Duck asked me to make a Mennonite German Borscht like his grandma made
yesterday and it was pretty good, but most importantly lots of cabbage, carrots, and potatoes.

This is the recipe I used


And we couldn't get soup bones so we used regular broth. I skipped the allspice berries, because I didn't have that either and it was fine.

I didn't know you could make Borscht with cabbage. I've had it Russian style, with beets, at a Russian-themed restaurant in SoFla. (Which went out of business in about a month; I'm not sure what marketing genius thought a Russian restaurant was a good idea.)

Okay, cabbage has to be better than beets.

You could get soup bones from there surely?

I think the store here used to carry them but they just aren't right now.

I didn't know you could make Borscht with cabbage. I've had it Russian style, with beets, at a Russian-themed restaurant in SoFla. (Which went out of business in about a month; I'm not sure what marketing genius thought a Russian restaurant was a good idea.)

Okay, cabbage has to be better than beets.
It's like ... Healthy macaroni and cheese with no macaroni or cheese. Lol

The cabbage brings about a rich buttery flavor.

At a guess, curing out your own corned beef is out of the question?
It's wonderful with horseradish sauce, boiled red potatoes, and buttered, steamed cabbage.

I'm just today finishing the curing of a whole brisket I picked up on sale. Good for three roasts. (St. Patrick's day is coming)
It requires 3 days of curing in brine made of spices, salt, and curing salt.

And I make my pasta from Semolina. It's like $30 for a 50lb bag. Much cheaper and better than anything store bought....not difficult with a pasta machine.

Bread? We got lots....I make all kinds. We bought a loaf for the first time in months because I had been out of town for a week moving my father closer to me.

Now I'm on a sourdough English Muffin kick. I roll them out and cut them before going to bed and then let them proof overnight. Then when I get up I bake them off. FRESH English muffins ROCK!.

Yeah, I got an old Olympic. Hand crank....not an electric one. Metal gears though. So it's lasted over 30 years. Basic and simple design. They aren't complicated gizmos.

I wouldn't know where to go for a new one.

All my recipes are stored on my PC but I've hurt my foot somehow this afternoon and it hurts to walk just now. It's a ecipr given to me by a friend and in her version she soaks driem beans over night but I use tinned ones. I send both versions if I can. It's very filling and nutritious. I like it with garlic bread.

Just as a bit of advice....

Don't store them on a computer's hard drive. Store them on a flash drive or memory card.

Computers die, and subsequently your recipies can die with them..

I had a lot of deliveries recently and I just ordered two 8 long foot garden beds for planting small vegetables.

Now I'm afraid the delivery man will be mad.

Good advice. I also have them printed off and in a file. Same with my poems. And on a memory stick.
