What sounds better than goodies homemade at Christmas?
Nothing storebought!

Home made caramels....
2 cups heavy cream (divided into 2 single cups)
1 cup butter
2 Cups sugar
½ Cup light corn syrup.
Vanilla extract.

Take one cup of cream and everything but the extract and put in a heavy bottomed SS pot. Heat to boiling while constantly stirring using a silicone rubber spatula. Focus on the bottom and sides. Cook this until you are a shade lighter tan/brown than you really want your caramels to be at.
Pour in remaining cream.
Cook until (never stop stirring during anything) this reaches hard ball which by my digital thermometer read 244. My glass candy thermometer read over 250.
Then remove from heat continue to stir until it stops boiling. (Crucial)

Then add Vanilla extract till grandma's ghost tells you to stop. (About a teaspoon)
Watch the bubbling and stir until incorporated.
Pour into a glass 9x13 (prolly truly an 8x12) and allow to cool.

Cut into girl thumb sized pieces and wrap in waxed paper.
